Or raclette -- a big hunk of melting cheese on a hot rack.

Mon, August 3, 2009 - 3:27 PMRaclette is awesome...my ex-wife was from the French Alps, so I've had it in its natural habitat (or almost, as it apparently comes from the Swiss Alps).

A slightly larger pumpkin stuffed with bread cubes/sauteed onions/bacon/cheese (lots -manchego or aged goat or whatever) and baked is totally amazing.
Forgot about that dish - will have to remember this fall. :)

Tue, August 18, 2009 - 3:20 PMI love just about any variation of baked brie (although I've never been a fan of it with the crust/phyllo around it). Some of my favorites are roasted garlic smashed on top them pitted, halfed calamata olives atop the garlic, or brown sugar and crushed pineapple, topped with tequila. Serve with crusty sourdough bread cubes or baguette slices. -

Tue, September 15, 2009 - 8:10 AMA restaurant I did some consulting for market tested a dish with a macadamia crusted baked brie that had a honey and balsamic glaze poured artistically over the entire serving dish, served with fresh pear slices.
