I have hardened gouda in the fridge,. smells fine bought it 3 months ago, but it is hard really hard.
Can I do anything to save the gouda i.e heat/cook it in food dish?

Mon, July 30, 2007 - 3:04 PMYes, old goudas are naturally hard...they're also highly delicious. Cheese shops sometimes use a wire-saw (piece of wire with jagged edges tied between two o-rings) to cut it in the shop, rather than a knife.
Grating it is one way to deal. It's pretty tasty though, you can sort of assault it with a sharp knife and cut it into little pieces and have it like any other nice cheese.

Wed, August 1, 2007 - 9:52 PMI second the fondue idea... but you'll probably need to cut it with some other yummy cheeses... add some sauted hotlinks, some other yummy sausages, and crusty sourdough to dip....... mnnnnn!!!! YUM!!

Mon, September 22, 2008 - 4:25 PMBeing Italian, I'm all about grating it as a table cheese, but the fondue or quiche ideas sound good. You could probably use it in a casserole of some sort or dress up some ordinary Mac and Cheese
