I want to try the pickle/cheddar combination. I never think of pickles as a pairing because I fear they would over power the cheese but I think English cheddar would stand up to the pickle and make an interesting mix of flavors. I'm kind of a flavor geek, I am very excited bout this and want to run out and try it. You have me wondering now about the mix of many pickled things and what they might compliment. Now you have me thinking about pickled ginger hmmm, wonder what would go with that? Any thoughts?

funny - just last night my hubby and I were talking about taking some of our homemade bread & butter pickles to a family BBQ this weekend, paired with a nice sharp cheddar. OH SO GOOD!

I guess I will always like the old classics....

      Stilton w/ Port
      Ossau Iraty w/ Cherry preserves
      Manchego w/ Quince paste
Brie or Camembert w/ Fig preserves
Chevrot w/ Honey drizzled on it......

Always, always, always serve the cheese at slightly above or at room temperature...eating cold cheese is just like eating cold french fries......

sourdough pretzels and a sharp cheddar

melted raclette and ham and gherkins and cocktail onions

bleu cheese cheeseburger (the better any of the ingredients, including the bun, the better the result)
