I just joined the tribe, and I'm just wondering what everyone's favorite cheeses are.
Forgive me if this topic's been exhausted...it's happened enough already...
To start off, mine's parmesan. :)

Re: Favorite Cheese
Thu, July 13, 2006 - 1:40 PMHas anyone had Burrata? ...mmm...big fresh buffalo mozzarella ball with an oozy creamy center..... -
-
Re: Favorite Cheese
Sat, July 15, 2006 - 9:17 AMOh... burrata..... I had the good fortune of having some at a restaurant not too long ago. It's a good thing it's not widely sold cause I would. not. stop. It was like mozzarella custard...soooooo gooood.
I'm currently craving Cypress Grove's Midnight Moon - it's a harder goats milk cheese, really nutty and a little crystalline (like reggiano) - and Cahill's Whiskey Cheese - which is firm, creamy, with a really nice whiskey tang. -
-
Re: Favorite Cheese
Tue, July 18, 2006 - 2:21 PMExcellent cheese.... Midnight Moon was my all time favorite cheeses for a while....and one of my customers told me I resembled the pretty lady on the label of that cheese. ( I wish...he must have forgotten his glasses that day)

Re: Favorite Cheese
Fri, July 21, 2006 - 5:05 AMI like almost any cheese, but I have to say that a good aged cheddar remains my favorite. I like the British farmhouse cheddars that have a horseradish undertone.
However, the hippest cheese these days is Paranno.
-
Re: Favorite Cheese
Fri, July 21, 2006 - 11:07 AMThat's like trying to pick a favorite child. ;)
I tend to love goat cheeses, then sheep, then cow...though.
And on a regular basis we often consume Laura Chenel chevre, real Parmesano Reggiano, Petite Basque, various blues but in particular I'm really loving Cashel Irish Blue these days... Recently discovered Andante Dairy which makes some fantastic cheeses... She has a goat with pink peppercorns that's lovely.
I find something new to love everytime I go to the cheese shop or get a nice cheese plate after dinner..heh. -
-
Re: Favorite Cheese
Sun, August 6, 2006 - 7:45 AMI can't really even begin to even place my top 10 favorite chesses....I would say my answer to the the question: "What is your favorite cheese?" would be: "Yes." -

Re: Favorite Cheese
Sat, October 21, 2006 - 3:11 PMThis one takes a little work to find, and it has to be served at room temperature to really appreciate, but I think it's worth the effort: Tomme de Savoie (make sure you get the 40% fat, not the diet 20%).

Re: Favorite Cheese
Wed, July 16, 2008 - 4:01 PMI think I need to try some red dragon. Yesterday I had some of a lovely old standby brillat savarin brie, I ahve also been craving some fleur verte and a simple English cheddar.
I noticed that several folks are eating medeterenain cheeses that I am not familiar with. So many of the cheeses that attract me are Piedmontese, I think I need to branch out a bit more. -
-
Re: Favorite Cheese
Fri, July 18, 2008 - 9:00 AMred dragon is incredible. really. I thought it was just pretty good for the longest time & then I finally had it served properly - at room temperature - and I was completely blown away.
